High-grade flour consists of tonkoizmelchenny particles of an inside layer, endosperm (the average size of particles of 30-40 microns), differs in white color, the greatest (79-80%) in the content of starch and average or low amount (10-14%) of proteins; an exit of a crude gluten makes about 28%, an ash-content no more than 0.55%. It contains the minimum quantity of cellulose (0,1-0,15%), fat and sugar. This grade of flour is most widespread at production of the premiums of flour products. Wheat flour of the premium possesses good baking properties, products from it have the good volume and the small developed porosity. It is the best of all to use such flour for shortcake, puff and yeast dough, in sauces and flour gas stations.
