Potato starch - the starch received from potatoes. Cages of tubers of a root of potatoes contain starch grains. To extract from them starch, potatoes crush. Potato starch consists of big oval spherical granules which size varies between 15 and 100 microns.

There are many grades of potatoes. For production of potato starch grades with the high content of starch are used (high specific weight, highly starchy). Recently the new grade of potatoes for processing was brought to starch which contains only one type of a molecule of starch: amylopectin. Amilopektinovy starch, after gelatinization has smaller retrogradation (destruction of starched paste) in storage time.
