Acetate kaltsiyae-263 - a food additive of group of preservatives. It can be applied as preservative, the acidity regulator, a sealant (vegetable fabrics).
Amorphous or crystal substance with a slight smell of acetic acid.
Acetate of calcium is received interaction of a carbonate or hydroxide of calcium with acetic acid.
Metabolism and toxicity
It is completely acquired with allocation of 3,75 kcal/g; free acid renders a nonspecific irritant action.
Admissible daily consumption is not limited. In the Russian Federation it is resolved in fruit and vegetables tinned, bread, other foodstuff individually or in a combination with other acetates.
Acetate of calcium can soften too sour taste of acetic acid in various products, be used in salts-plavitelyakh, as a sealant of vegetable fabrics. However from salts of acetic acid application in the food industry is found practically only by sodium diacetate. Diacetate of sodium and acetate of calcium apply to protection of bread against a so-called "potato illness" - damage which activators are bacteria of a type of Bacillus mesentericus.
