Dill (genus ANETHUM GRAVEOLENS) is a spicy herbaceous annual plant Anethum graveolens of the umbrella family. Dried dill is well stored throughout the year. Dill greens contain a large amount of vitamin C, as well as vitamins B, B1, P, PP, carotene, calcium, potassium, iron, phosphorus salts, nicotinic and folic acids, proteins, carbohydrates, rutin, flavonoids, phytoncides and essential oil, the components of which are carvone, fellandren and limonene. Dill is used to season the first and second courses, meat, fish, vegetable and mushroom sauces and gravies, salads and omelettes, beans. Especially wonderfully it complements potato dishes, goes well with curds, cheeses, especially processed cheese and feta cheese.
